Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.

Add 1 cup of diced yellow onion, 1 cup of diced celery, and 1 cup of diced carrots to the pot. Sauté until the vegetables are softened, which takes approximately 5 minutes.

Continue to simmer the chowder for an additional 5 minutes to allow the flavors to meld and the soup to thicken slightly.
