Peel the 4 medium Yukon Gold potatoes. Slice each potato in half lengthwise, then cut into planks, and finally into fry-shaped sticks.

Pour water into a large pot. Add the sliced potatoes to the pot. Add 1 teaspoon baking powder to the water with the potatoes. Bring the water to a boil and cook the potatoes until they are soft.

Carefully drain the boiled potatoes. Transfer them to a bowl lined with paper towels and gently pat them dry, squeezing them lightly to remove excess moisture.

Preheat your oven to 450°F. Spray a baking sheet evenly with olive oil spray.

Place the dried, boiled potato fries onto the prepared baking sheet. Season generously with salt, pepper, and any other desired seasonings (such as dried herbs). Drizzle 1 tablespoon olive oil over the seasoned potatoes.

Place the baking sheet with the seasoned potatoes into the preheated oven. Bake until the fries are golden brown and crispy.
