In a large skillet or pan, cook the ground beef over medium-high heat, breaking it apart with a spatula, until thoroughly browned and no pink remains. This should take about 8-10 minutes.

Carefully drain any excess fat from the cooked ground beef using a strainer. Return the drained beef to the skillet.
Add the taco seasoning to the ground beef. Stir well to ensure the seasoning is evenly distributed throughout the meat. Cook for 1-2 minutes, allowing the seasoning to toast slightly.

Reduce the heat to medium-low. Add the cubed Velveeta processed cheese and the undrained can of Rotel diced tomatoes and green chilies to the skillet with the seasoned ground beef.

Stir the mixture continuously, allowing the Velveeta cheese to melt and combine with the meat and tomatoes. Continue stirring until all ingredients are well combined, creating a smooth, creamy, and uniform cheesy meat filling. This will take approximately 5-7 minutes.

While the filling is still hot, spoon generous amounts of the Rotel cheese and meat mixture into the hard taco shells.

Garnish the assembled tacos with fresh chopped parsley, if desired. Serve immediately.
