Finely chop the entire bunch of green onions, mince the 1 clove of garlic, and grate the 5 grams of ginger. Set aside.

In a medium-sized bowl, add the 350 grams of shrimp, chopped green onions, minced garlic, and grated ginger. Season with 1/4 teaspoon of salt and 1/4 teaspoon of pepper (or to your preferred taste), and add the 1 tablespoon of soy sauce. Mix all ingredients thoroughly until well combined.

Fill a shallow dish or plate with warm water. Take one sheet of rice paper and submerge it in the water for about 15-20 seconds, or until it becomes pliable and soft. Carefully remove it and lay it flat on a clean work surface.

Place approximately 1 to 1 1/2 tablespoons of the shrimp mixture onto the center of the wet rice paper sheet. Do not overfill.

Wet a second rice paper sheet as described in Step 3. Carefully place this second wet rice paper sheet directly on top of the shrimp filling, aligning it with the first sheet.

Using a sharp knife or a pizza cutter, cut the double-layered rice paper with the filling into 4 equal squares.

Take each square and fold it into a dumpling shape. A common method is to fold opposite corners to meet in the center, creating a triangle, then fold the remaining two corners inwards to fully enclose and seal the filling. Repeat for all squares until you have 4 dumplings from this set of rice paper.

Repeat steps 3 through 7 with the remaining rice paper sheets and shrimp filling until all 12 dumplings are assembled.

Preheat your air fryer to 400°F (200°C).

Place the assembled dumplings in a single layer in the air fryer basket. Do not overcrowd; you may need to cook them in batches.

Air fry at 400°F (200°C) for 8 minutes, or until the dumplings are golden brown and crispy, and the shrimp filling is cooked through. Serve immediately.
