In a large mixing bowl, combine the ground sausage, the dry biscuit mix (from the Red Lobster box), milk, grated sharp cheddar cheese, and grated smoked gouda cheese. If using, add the cream cheese.

Using gloved hands, thoroughly mix all the ingredients until well combined and a uniform, dough-like consistency is achieved. Ensure there are no dry spots of biscuit mix.

Take small portions of the mixture, about 1 1/2 to 2 inches in diameter, and roll them into compact balls. Place the formed sausage balls onto the prepared baking sheet, ensuring they are evenly spaced to allow for even cooking.

Bake the sausage balls for 25 to 30 minutes, or until they are golden brown and cooked through. The internal temperature should reach 160°F.

While the sausage balls are baking, prepare the glaze. In a small bowl, melt the butter. Stir in the seasoning packet from the Red Lobster biscuit mix and the honey. Mix well until combined.

Once the sausage balls are out of the oven, immediately brush the prepared glaze generously over each one. Serve warm, optionally with a side of honey mustard for dipping.
