In a large bowl, combine the cooked lobster meat, melted butter, minced fresh chives, minced fresh dill (or tarragon), fresh lemon juice, and salt. Mix thoroughly with a spatula until all ingredients are well combined. Set the lobster mixture aside.

Take one slice of brioche bread and evenly spread a few tablespoons of grated Gruyere cheese on top. Place another slice of brioche bread on top to form a cheese sandwich base.

Heat a panini press or a large skillet over medium heat. Carefully place the assembled cheese sandwich into the hot panini press or skillet. Cook for 3-5 minutes per side, or until both sides are golden brown and the Gruyere cheese is melted and bubbly.

Once the grilled cheese base is cooked, carefully open it. Fill the inside with a generous amount of the prepared lobster mixture. Top the lobster mixture with approximately 6 potato chips, lightly crushed.

Close the lobster grilled cheese sandwich and serve immediately while warm.
