Place the bones from a Costco rotisserie chicken into a large pressure cooker pot.

Add the yellow onion (cut in half), ginger (cut in half), star anise, cinnamon stick, and rock sugar to the pot.

Add 2 tablespoons of fish sauce to the pot. Adjust to taste later if needed.

Fill the pot with enough water to submerge all the ingredients, typically around 8-10 cups.
