Preheat your oven to 350°F. Grease an 8x8 inch baking dish with melted butter.

In a large bowl, whisk together the eggs, granulated sugar, whole milk, heavy cream, vanilla extract, cinnamon, and nutmeg until well combined.

Stir in the mashed bananas until evenly distributed.

Add the cubed bread to the wet mixture, gently tossing to ensure all the bread is coated. Let it sit for 15 minutes to allow the bread to absorb the liquid.

Pour the bread pudding mixture into the prepared baking dish, spreading it evenly.

Bake for 40-45 minutes, or until the pudding is set and golden brown on top. A knife inserted into the center should come out mostly clean.

While the bread pudding bakes, prepare the caramel sauce. In a medium saucepan, combine the granulated sugar and water. Cook over medium heat, stirring until the sugar dissolves.

Increase the heat to medium-high and boil without stirring until the syrup turns a deep amber color. This can happen quickly, so watch it carefully.

Remove from heat and carefully pour in the warmed heavy cream (it will bubble up). Whisk vigorously until smooth. Add the cubed butter and salt, whisking until the butter is fully incorporated and the sauce is smooth.

Let the caramel sauce cool slightly. It will thicken as it cools.

Once the bread pudding is done, remove it from the oven and let it cool for a few minutes before serving. Serve warm, drizzled generously with the caramel sauce.
