Preheat your oven to 400F (200C).

In a large bowl, mash the cooked potatoes to a slightly chunky consistency. Do not mash until perfectly smooth; some small chunks should remain. Let them cool slightly.

To the mashed potatoes, add the finely chopped scallions, finely chopped parsley, ground beef, salt, ground black pepper, turmeric, garlic powder, baharat, and egg. Mix all ingredients very well until evenly combined. You can use your hands (with gloves) for best results.

Take each pita half and carefully open it up to create a pocket. Generously stuff each pita half with the prepared Beef Aruk mixture.

Place a grilling pan on the stove over medium heat. Pour 5 tablespoons of olive oil into the pan.

Once the oil is hot, sear each stuffed pita face down for 4 minutes until it develops a nice brown color and becomes crispy.

Flip the pitas and sear both remaining sides for 2-3 minutes on each side, until golden brown and crispy.

Spray olive oil or avocado oil on top of the seared pitas.

Transfer the pitas to the preheated oven (400F/200C) and bake for 8 more minutes to ensure the beef is fully cooked through and the pitas are extra crispy.

Serve the Aruk Arayes immediately with a drizzle of tahini, amba, green schug, and sumac onions, if desired. Enjoy!
