Prepare the breading stations. Cut the large chicken breast into 4 equal pieces. Dredge each chicken piece completely in the seasoned flour, ensuring it is fully coated. Shake off any excess flour.

Dip the floured chicken piece into the seasoned beaten egg, allowing any excess to drip off.

Finally, coat the chicken piece thoroughly with the seasoned Panko breadcrumbs, pressing lightly to ensure adhesion.

Heat the vegetable oil in a large, heavy-bottomed pot or deep fryer to 350°F. Carefully place the breaded chicken pieces into the hot oil, ensuring not to overcrowd the pot. Fry for 5-7 minutes per side, or until golden brown, crispy, and cooked through to an internal temperature of 165°F. Remove the chicken from the oil and place on a wire rack set over a baking sheet to drain excess oil.

While the chicken fries, prepare the spicy Caesar slaw. In a mixing bowl, combine the chopped romaine lettuce, Caesar dressing, 1/4 teaspoon paprika, a pinch of cayenne pepper, a pinch of red pepper flakes, and 1/4 teaspoon garlic powder. Toss until the lettuce is thoroughly coated.

Melt the salted butter in a large skillet over medium heat. Slice the brioche buns in half and toast them in the melted butter until lightly golden and warmed, about 1-2 minutes per side.

To assemble each sandwich: Place the bottom half of a toasted brioche bun on a serving plate. Spread a layer of the spicy Caesar dressing mixture (from the slaw) onto the bottom bun. Place one piece of crispy chicken on top of the sauce. Pile a generous amount of the prepared spicy Caesar slaw on top of the crispy chicken. Cover with the top half of the toasted brioche bun.

(Optional Fries) If making fries, thinly slice the potatoes. Heat vegetable oil in a pot to 350°F. Fry the thin-cut potatoes until crispy. Remove and immediately season with herb salt while hot.
