In a medium bowl, combine the chicken thighs with 1 tablespoon soy sauce, 1/2 tablespoon dark soy sauce, 1 teaspoon sesame oil, 1/4 teaspoon baking soda, and 1/4 teaspoon black pepper. Mix well to ensure the chicken is evenly coated. Set aside to marinate for 15-20 minutes.

Add the strained rice cakes to the wok. Sauté for 1-2 minutes, adding 1-2 tablespoons more oil if the wok appears dry or the rice cakes are sticking.

Pour all the prepared sauce into the wok. Toss everything well to coat the rice cakes and vegetables evenly. Cover the wok with a lid and cook on medium heat for 4-5 minutes, allowing the rice cakes to soften and absorb the sauce.

Uncover the wok and add the baby bok choy. Cover the wok again with the lid and cook for 1 more minute, or until the bok choy is slightly softened but still vibrant.

Uncover the wok. Add all the cooked chicken back into the wok. Drizzle a small amount of sesame oil over the entire dish for added fragrance and flavor. Give everything one final toss to combine. Serve immediately and enjoy!
