Lay out all 8 slices of bread on a clean work surface. For each sandwich, you will use two slices.

On one slice of bread for each sandwich, generously spread about 2 tablespoons of softened cream cheese.

Evenly distribute the chopped sun-dried tomatoes over the cream cheese on these slices.

On the remaining slices of bread, spread about 2 tablespoons of mashed avocado.

Place two slices of cheddar cheese on top of the mashed avocado on each of these bread slices.

Add a generous handful of arugula on top of the cheese slices.

Carefully bring the two halves of each sandwich together, with the cream cheese/sun-dried tomato side meeting the avocado/cheese/arugula side, to form four complete sandwiches.

Heat a large skillet or griddle over medium heat. Lightly butter one side of each sandwich.

Place the buttered side down on the hot skillet. Butter the top side of the sandwiches while they are cooking. Grill for 3-5 minutes per side, or until the bread is golden brown and crispy, and the cheese is melted and gooey.

Once grilled, remove the sandwiches from the skillet. For each sandwich, cut in half diagonally.
