Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Pat the chicken thighs dry with paper towels. Season them evenly with salt and black pepper.

In a medium bowl, whisk together all the ingredients for the gochujang glaze: gochujang, honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Ensure it's well combined.

Place the seasoned chicken thighs on the prepared baking sheet, skin-side up. Brush about half of the gochujang glaze generously over the chicken.

Roast the chicken in the preheated oven for 20 minutes.

Remove the chicken from the oven. Brush the remaining glaze over the chicken thighs. Return to the oven and roast for another 15-20 minutes, or until the chicken is cooked through and the glaze is caramelized and slightly sticky. The internal temperature should reach 165°F (74°C).

Once cooked, remove the chicken from the oven and let it rest for 5 minutes before serving. Garnish with toasted sesame seeds and sliced scallions, if desired.
