Take the 5 to 6 bunches of bok choy. Carefully cut off the very end of the root of each bok choy bunch to separate the individual leaves.

Place the separated bok choy leaves into a large bowl. Fill the bowl with water and thoroughly rinse the bok choy to remove any dirt or debris.

Drain the rinsed bok choy using a colander, shaking gently to remove excess water.

Return the drained bok choy to the large bowl. Add the 2 to 3 tablespoons of gochugaru (red pepper flakes), 1 tablespoon of granulated sugar, and 4 minced garlic cloves to the bowl.

Pour in the 2 1/2 tablespoons of vinegar, 1 tablespoon of fish sauce, and 1 tablespoon of sesame oil. Sprinkle in the 2 tablespoons of sesame seeds.

Using clean hands, thoroughly toss and mix all the ingredients together until the bok choy leaves are evenly coated with the seasoning mixture. Ensure every leaf gets a good coating.

Serve immediately as a quick snack or alongside a bowl of freshly steamed white rice.
