Place the 450g of chicken mince into a bowl. Add 1 teaspoon salt, 1 teaspoon pepper, 2 teaspoons onion powder, 1 tablespoon smoked paprika, 1 teaspoon mustard powder, 1 tablespoon chilli powder, and 1 teaspoon cayenne pepper to the chicken mince. Mix all the ingredients together thoroughly until well combined.
Wet your hands to prevent sticking. Form the seasoned chicken mince into three even patties, approximately 150g each. Place the formed patties on baking paper. Place the patties in the freezer for 5 minutes.

On a plate, combine 40g breadcrumbs, 1/2 teaspoon chilli powder, 1 teaspoon paprika, and a dash of cayenne pepper. Mix these ingredients together thoroughly.

Take the patties out of the freezer. Coat each chicken patty evenly in the prepared breadcrumb mixture, ensuring they are fully covered.

Place the coated chicken patties into an air fryer basket or onto a baking tray. Spray the patties with light cooking oil spray. Cook using one of the following methods: Air fry at 190 degrees Celsius for 12-15 minutes OR Bake in the oven at 200 degrees Celsius for 15-18 minutes. Cooking times may vary depending on the appliance and patty thickness, so monitor closely.

While the chicken patties are cooking, combine 45g light mayonnaise (or fat-free mayonnaise), 2g mustard, and 1/2 teaspoon garlic powder in a bowl. Mix everything together thoroughly until a smooth sauce is formed.

Grab your three toasted seeded brioche buns. Place one cooked chicken patty on the bottom half of each bun. Add lettuce on top of the chicken patty. Evenly distribute the prepared McChicken sauce (approximately 16g per burger) across the top half of each bun. Place the top bun (with the sauce) onto the lettuce and chicken patty to complete each burger.

The Spicy McChicken burgers are now ready to be enjoyed.
