Preheat your oven to 400°F. Line a baking sheet with parchment paper.

In a large bowl, combine the all-purpose flour, baking powder, salt, and baking soda. Whisk these dry ingredients together thoroughly.

Add the cold, cubed butter to the dry mixture. Using a pastry blender or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.

Stir in the shredded sharp cheddar cheese and fresh or frozen corn until well combined with the flour mixture.

In a separate medium bowl, whisk together the buttermilk and cream.

Pour the buttermilk and cream mixture into the flour mixture. Mix gently until the ingredients are just combined and a shaggy dough forms. Be careful not to overmix.

Turn the dough out onto a lightly floured surface. Knead the dough briefly, just enough until it comes together into a cohesive mass.

Pat the dough into a uniform circle or rectangle, approximately 1-inch thick.

Use a biscuit cutter to cut out individual biscuits. Alternatively, use a knife to cut the dough into squares. Gather any dough scraps, gently re-knead them, and cut out additional biscuits until all dough is used.

Place the cut biscuits onto the prepared baking sheet, leaving a little space between each.

Bake the biscuits for 15-20 minutes, or until they are golden brown on top and cooked through.

While the biscuits are baking, prepare the jalapeño honey butter: Combine the seeded and minced jalapeño, honey, chipotle chili powder, and melted butter in a small bowl. Stir well to mix all ingredients.

Once baked, remove the warm biscuits from the oven. Brush the tops of the hot biscuits generously with the prepared jalapeño honey butter. Serve immediately.
