Stir in 1 cup of heavy cream. Continue to cook, bringing the sauce back to a gentle simmer, allowing it to thicken slightly, about 3-5 minutes.

While the sauce is simmering, in a separate large pot, bring salted water to a rolling boil. Add 1 pound of rigatoni pasta and cook according to package directions until al dente. Drain the pasta, reserving about 1 cup of the pasta water.

Add the cooked chicken back into the pan with the sauce. Add the cooked rigatoni pasta to the pan. Stir everything together until the pasta and chicken are well coated in the sauce.

Stir in 1/2 cup of grated Parmesan cheese. If the sauce is too thick, add a splash of the reserved pasta water to achieve the desired creamy consistency.

Garnish generously with 1/4 cup of fresh chopped parsley before serving.
