Add the unsalted butter to an 8 x 8-inch baking dish. Place the baking dish into the oven and preheat the oven to 350°F. The butter will melt as the oven preheats.

While the oven preheats and butter melts, prepare the cobbler batter. In a medium bowl, combine the granulated sugar and lemon zest. Rub them together with your fingertips to release the aromatic oils from the lemon zest.

To the sugar and lemon zest mixture, add the all-purpose flour, kosher salt, and baking powder. Whisk thoroughly to ensure all dry ingredients are evenly incorporated.

Evenly arrange the hulled and quartered strawberries on top of the batter in the baking dish.

Carefully transfer the baking dish back into the preheated 350°F oven. Bake for 45-55 minutes, or until the cobbler is golden brown on top and set in the middle.

Once baked, remove the cobbler from the oven and let it cool on a wire rack for 15 minutes before serving. This allows the cobbler to set slightly and cool to an enjoyable temperature.
