Preheat your oven to 275°F. Line a large baking sheet with aluminum foil for easier cleanup.

Prepare the ribs: If the membrane is still on the back of the ribs, use a knife to loosen a corner, then grip it with a paper towel and pull it off. Pat the ribs dry with paper towels.

Spread the yellow mustard evenly over both sides of the ribs. This acts as a binder for the dry rub.

In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, chili powder, cayenne pepper (if using), salt, and black pepper. Mix well.

Generously rub the spice mixture all over the ribs, ensuring they are fully coated.

Place the seasoned ribs on the prepared baking sheet. Cover the baking sheet tightly with another layer of aluminum foil, creating a sealed packet.

Bake in the preheated oven for 2 1/2 to 3 hours, or until the ribs are very tender and the meat easily pulls away from the bone. The exact time will depend on the thickness of your ribs.

Remove the ribs from the oven and carefully remove the top layer of foil. Increase the oven temperature to 375°F.

Brush the ribs generously with your favorite barbecue sauce.

Return the ribs to the oven, uncovered, and bake for another 15-20 minutes, or until the sauce is caramelized and slightly sticky. Watch carefully to prevent burning.

Remove from the oven, let rest for 5-10 minutes before slicing and serving.
