Heat the mustard oil in a small pan until hot, then remove from heat and let it cool slightly to a warm temperature.

In a large bowl or plate, combine the slightly cooled mustard oil, gram flour, and Kashmiri red chili powder. Mix them well to form a thick paste.

Add the tandoori masala (to taste), red chili powder, garam masala, black pepper, cardamom powder, salt, yogurt, crushed Kasuri methi, ginger-garlic paste, and lemon juice to the bowl. Mix thoroughly until the marinade is smooth and well combined.

Add the cubed paneer and bell peppers to the marinade. Gently toss and coat everything evenly in the marinade, ensuring all pieces are well covered.

Cover the bowl and let the paneer and bell peppers marinate for at least 30 minutes in the refrigerator. For the best flavor, marinate overnight.

Once marinated, thread the paneer and bell peppers onto skewers, alternating between the vegetables and paneer for an appealing look and even cooking.

To cook in an air fryer: Preheat the air fryer to 375°F (190°C). Arrange the skewers in a single layer in the air fryer basket. Cook for 12 minutes, turning them halfway through, until the paneer and vegetables are lightly charred and cooked through.

To cook in a pan: Heat a large non-stick pan over medium heat. Place the skewers in the pan and cook, turning frequently, until all sides are golden brown and slightly charred.

Once cooked, brush the hot skewers with a little melted ghee and sprinkle generously with freshly chopped cilantro for a rich, restaurant-style finish.

Serve the Tandoori Paneer Tikka Skewers hot with mint chutney, fresh lemon wedges, and sliced onions.
