Preheat your oven to 450°F.

Prepare the carrots: Peel the carrots. If any carrots are thick, cut them in half lengthwise to ensure even roasting.

In a large bowl, toss the prepared carrots with 2 tablespoons of olive oil, smoked paprika, garlic powder, oregano, Aleppo pepper (or chili flakes), salt, and black pepper until evenly coated. Spread the seasoned carrots in a single layer across a baking sheet.

Roast the carrots in the preheated oven for 18-20 minutes, or until the edges are nicely blistered and the carrots are tender-crisp.

While the carrots are roasting, prepare the herby yogurt tahini base: In a medium bowl, combine the thick Greek yogurt, tahini, lemon zest, lemon juice, minced garlic clove, 2 tablespoons of fresh dill, 2 tablespoons of fresh parsley, and 1 tablespoon of olive oil. Whip until smooth. Taste and adjust with more salt or lemon juice if desired. If you prefer a stronger tahini flavor, you can drizzle in a bit more.

To serve, spread the whipped yogurt base onto a serving plate. Arrange the warm roasted carrots on top of the yogurt.

Garnish with crushed walnuts (or pecans), finely chopped fresh herbs, crumbled feta cheese, and a sprinkle of Aleppo pepper (or chili flakes). Drizzle with 1-2 tablespoons of honey, if desired.
