Preheat your oven to 375°F. Lightly grease a medium-sized baking dish (approximately 9x13 inches).

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the peeled and deveined shrimp. Season with 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1/4 teaspoon red pepper flakes. Cook for 2-3 minutes per side, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for 1 minute until fragrant. Add the fresh spinach and cook, stirring occasionally, until the spinach has completely wilted, about 3-5 minutes.

Add the softened cream cheese and 1/4 cup of water to the skillet with the spinach and garlic. Stir continuously over medium heat until the cream cheese has fully melted and a smooth, creamy sauce has formed. Season with the remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper.

Return the cooked shrimp to the skillet with the creamy spinach mixture. Add the cherry tomatoes and dried oregano. Stir all ingredients together gently to combine.

Pour the entire mixture into the prepared baking dish. Sprinkle the 1/2 cup of grated Parmesan cheese evenly over the top.

Bake in the preheated oven for 25 minutes, or until the dish is bubbly and the Parmesan cheese is golden brown.

Remove from the oven and let rest for a few minutes before serving. Serve hot.
