Preheat the oven to 180°C (355°F) using static/conventional heat.

Line a baking tray with baking paper.

In a bowl, combine the egg whites, caster/superfine sugar, almond meal/almond flour, vanilla paste, the zest of 1–2 mandarins (or your favorite citrus), and citrus juice (or limoncello, or amaretto).

Mix all ingredients until a soft, sticky dough forms.

Roll the mixture into small balls, aiming for about 24-30 cookies.

Place a walnut piece on top of each ball and gently press it in.

Roll each ball generously in icing/confectioners’ sugar.

Arrange the rolled balls on the prepared baking tray, ensuring to leave a little space between them.

Bake for 20 minutes. The amaretti will be soft when they come out of the oven, which is the desired consistency.
Allow the cookies to cool completely on the baking tray before serving. As they cool, they will firm up on the outside while maintaining a fudgy and moist center.
