In a 6-quart or larger crock pot, combine the soy sauce, honey, ketchup, minced garlic, oregano, chicken broth, and sesame seeds. Whisk well to combine all ingredients.

Add the boneless, skinless chicken thighs to the sauce in the crock pot, ensuring they are fully submerged or coated.

Cover the crock pot and cook on high for 4 hours.

Once the chicken is cooked through, carefully remove it from the crock pot. Using two forks or a shredder gadget, shred the chicken into bite-sized pieces.

Return the shredded chicken to the crock pot, stirring it into the sauce.

Break the uncooked ramen noodle blocks into a few pieces if desired, then add them directly into the crock pot on top of the chicken mixture. Do not add the seasoning packets.

Cover the crock pot and continue to cook on high for an additional 30 minutes, or until the ramen noodles are tender and have absorbed some of the sauce.

Serve the Honey Garlic Chicken & Noodles hot, garnished with extra sesame seeds and sliced green onion.
