Preheat the oven to 375°F.

Heat the olive oil in a large oven-safe skillet over medium-high heat.

Add the ground beef to the skillet. Break it up with a spoon and cook until browned, about 5 to 7 minutes. Drain any excess grease.

Stir in the taco seasoning, undrained diced tomatoes with green chiles, and red enchilada sauce. Bring the mixture to a simmer.

Break the ramen noodle blocks into quarters. Add them to the skillet.

Pour the beef broth over the noodles. Stir everything together to combine.

Cover the skillet and bake in the preheated oven for 15 minutes.

Remove the skillet from the oven, stir the contents, and then top with the shredded cheddar cheese.

Return the skillet to the oven, uncovered, and bake for 5 more minutes, or until the cheese is melted and bubbly.
