Preheat your oven to 400°F (200°C). Drain and rinse the canned chickpeas thoroughly. Pat them dry with a paper towel. Spread the chickpeas in a single layer on a baking sheet. Roast for 15-20 minutes, or until slightly crispy. Set aside to cool.

While chickpeas are roasting, prepare the salad vegetables. In a large mixing bowl, combine the cooked quinoa, chopped strawberries, chopped Persian cucumbers, cubed avocado, and thinly sliced red onion.

Prepare the dressing: In a small bowl, whisk together the balsamic glaze, fresh lime juice, olive oil, and minced garlic. Season with salt and black pepper to taste. Set aside.

Prepare the halloumi: Slice the 8.8-ounce block of halloumi cheese into 1/2-inch thick rectangular pieces. Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Add the halloumi slices to the hot skillet.

Sauté the halloumi for 3-4 minutes per side, until golden brown and slightly crispy. During the last minute of cooking, drizzle the hot honey over the halloumi, allowing it to caramelize slightly. Remove from heat and cut the halloumi into bite-sized pieces.

Add the cooled roasted chickpeas and the sautéed hot honey halloumi pieces to the large mixing bowl with the other salad ingredients. Pour the prepared dressing over the salad.

Toss all the ingredients thoroughly to ensure everything is well combined and coated with the dressing. Portion the salad into individual serving bowls or meal prep containers.
