Heat a large non-stick pan over medium heat. Arrange 9 pepperoni slices in a single layer in the pan, forming a 3x3 grid.

Sprinkle 1/2 cup of shredded mozzarella cheese evenly over the pepperoni slices. Allow the cheese to melt and crisp around the edges, forming a cheese skirt.

Place one slice of white bread directly on top of the melting cheese and pepperoni.

Immediately place one slice of provolone cheese on top of the bread.

Spoon 1/4 cup of chunky pizza sauce over the provolone cheese slice, spreading it evenly.

Place the second slice of white bread on top of the pepperoni.
