Chili Cheese Fritos Corn Salad
Ingredients
For the Salad Base
- 2 Fritos Chili Cheese chips, standard size, crushed
- 2 cans corn, 15 ounce each, drained
- 1 can black beans, 15 ounce, drained
- 1 red onion, diced
- 1 jalapeño, seeded and diced
For the Dressing
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup cilantro, chopped
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 lime, juiced

Open two bags of Fritos Chili Cheese chips. Crush the chips inside the bags until they reach a medium-fine consistency. Pour the crushed Fritos into a large mixing bowl.

Drain the two 15 ounce cans of corn and the one 15 ounce can of black beans. Add the drained corn and black beans to the bowl with the crushed Fritos.

Dice the red onion and add it to the bowl. Seed and dice the jalapeño, then add it to the bowl.

In a separate medium-sized bowl, combine the mayonnaise, sour cream, and chopped cilantro.
