Take an onion. Cut off its top and bottom ends, then peel the onion completely. Roughly chop the peeled onion into pieces.

Take 3 cloves of garlic. Peel all the garlic cloves.
Add the roughly chopped onion pieces to a mortar. Add the peeled garlic cloves and 1 bunch of fresh cilantro to it.

Add about 2-3 teaspoons of red chili powder, about 1 teaspoon of coriander powder, and about 1 teaspoon of salt (pink salt is preferred) to the mortar.

Add 1 tablespoon of yogurt to the mortar.

Using a pestle, pound all the ingredients in the mortar until a coarse, well-mixed paste is formed. (If a mortar and pestle are not available, a mixer can be used, but the mixture should not be ground too finely).

Once the chutney paste is ready, transfer it from the mortar to a separate small metal bowl.

Place a stainless steel wok on the gas stove. Add oil to the wok and heat it until it is very hot.

Once the oil is hot and ready, add the prepared chutney paste from the bowl into the hot oil. It should make a 'sizzling' sound.

Stir the chutney well in the hot oil, mixing all the ingredients. Continue to cook the chutney for 1-2 minutes until it is well cooked and combined.

The chutney is now ready. Serve it. It can be eaten with roti or rice.
