Bring a large pot of salted water to a rolling boil. Add the live lobsters, headfirst, and cook for 8-10 minutes, or until the shells are bright red and the meat is opaque. Carefully remove the lobsters from the pot and plunge them into an ice bath to stop the cooking process.

Once cool enough to handle, twist off the claws and tail from each lobster. Using a nutcracker or the back of a heavy knife, crack open the claws and knuckles to extract the meat. Cut the tail shells lengthwise with kitchen shears and remove the tail meat. Discard the shells and any tomalley or roe. Roughly chop the lobster meat into bite-sized pieces.

While the lobsters are cooling, bring another large pot of salted water to a boil. Add the wide egg noodles and cook according to package directions until al dente. Drain the noodles thoroughly, reserving 1/4 cup of the pasta water.

In a large skillet or Dutch oven, melt the unsalted butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to brown it.

Add the chopped lobster meat to the skillet with the butter and garlic. Toss gently to coat and heat through for 1-2 minutes.

Add the drained noodles to the skillet with the lobster. Stir in the chopped chives, parsley, lemon juice, black pepper, and kosher salt. If the noodles seem too dry, add a splash or two of the reserved pasta water until they are nicely coated and glossy.

Serve immediately, garnished with extra fresh herbs if desired.
