Ensure your ripe bananas are peeled, sliced into 1-inch pieces, and frozen solid. This usually takes at least 4 hours, or preferably overnight, for the best nice cream consistency.

Combine the frozen banana slices, unsweetened cocoa powder, 1/4 cup milk, optional maple syrup, and optional vanilla extract in a high-speed blender or food processor.
Blend the mixture, starting on a low speed and gradually increasing to high. You will need to stop frequently to scrape down the sides with a spatula and push the ingredients towards the blades. Continue blending until the mixture is completely smooth and creamy, resembling soft-serve ice cream. If the mixture is too thick to blend, add additional milk 1 tablespoon at a time until it reaches the desired consistency.

Taste the nice cream and adjust sweetness if desired by adding a bit more maple syrup, then blend briefly to combine.

Serve immediately for a soft-serve texture. If you prefer a firmer, scoopable consistency, transfer the nice cream to a freezer-safe container and freeze for an additional 30 to 60 minutes.
Garnish with optional mini chocolate chips before serving.
