In a food processor or high-speed blender, combine the soaked and deseeded dates, roasted almonds, walnuts, oats, cocoa powder, and 2-4 tablespoons of the water used to soak the dates. Start with 2 tablespoons of water and add more if needed to achieve the desired consistency.

Blend all ingredients together until a sticky, crumbly, and cohesive mixture forms. The mixture should resemble a thick dough with visible nut pieces.

Either roll the mixture into small balls or, for square-shaped bites, firmly press the mixture into the cavities of a silicone ice cube tray.

Refrigerate the shaped bites for approximately 20 minutes to allow them to firm up.

Once firm, carefully pop the bites out of the silicone tray or from the rolled shape.

Using a toothpick, pierce each bite and dip it into the melted dark chocolate, ensuring it is evenly coated. Place on parchment paper to set.

Serve the chocolate-coated bliss bites and enjoy. Store any leftovers in an airtight container in the refrigerator.
