Prepare the watermelon: Place the diced seedless watermelon into a blender. Blend until completely smooth, about 1 to 2 minutes. You may need to do this in batches depending on the size of your blender.

Strain the puree: Pour the watermelon puree through a fine-mesh sieve into a large bowl or pitcher, pressing gently on the solids to extract as much liquid as possible. Discard the pulp. You should have approximately 4 cups of watermelon juice.

Make the simple syrup: In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring constantly, until the sugar is completely dissolved. Remove from heat and let cool completely to room temperature.

Prepare the mocktail base: In a large pitcher, gently muddle the fresh mint leaves. Add the lime zest, cooled simple syrup, strained watermelon juice, and fresh lemon juice. Stir well to combine.

Add sparkling water: Just before chilling, add the chilled sparkling water to the pitcher. Stir gently to combine, being careful not to lose too much carbonation.

Chill and serve: Cover the pitcher and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and chill completely. Serve cold over ice in glasses, optionally garnished with a fresh mint sprig or a watermelon wedge.
