Cook the pasta according to package directions until al dente. Drain and set aside.

In a large pan or skillet, heat 1 tablespoon of oil over medium heat. Add the sliced shallots and cook until softened, about 3-5 minutes.

Add the sliced mushrooms to the pan with the shallots. Cook, stirring occasionally, until the mushrooms have released their moisture and are lightly browned, about 5-7 minutes.

Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn the garlic.

Pour in the 300 ml of double or single cream. Stir to combine with the shallots, mushrooms, and garlic.

Add the 1 tablespoon of cajun seasoning, 1 teaspoon of salt, 1 tablespoon of mixed herbs, and 1 tablespoon of chilli flakes to the cream mixture. Stir thoroughly to combine all the spices with the cream and vegetables. Allow the sauce to simmer gently and thicken slightly for 2-3 minutes.

Add the cooked pasta to the pan with the creamy mushroom sauce. Using tongs or a large spoon, thoroughly mix the pasta with the sauce until all the strands are evenly coated.

If using, stir in the grated cheddar cheese until melted and fully incorporated into the sauce.
