In a large pot or pressure cooker, add 1 packet of ramyun seasoning.

Pour enough water into the pot to ensure the pork belly will be fully submerged. Approximately 4 cups should suffice for 1 pound of pork belly.

Carefully place the thick-cut pork belly into the pot.

Add a splash of mirin and the lemon slices to the pot.

If using a pressure cooker, cook the pork belly for 40 minutes. If using a regular pot, bring the water to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer for 45 to 50 minutes, or until the pork belly is fork-tender.

Once cooked, carefully remove the pork belly from the pot and let it rest for a few minutes.

Slice the cooked pork belly into desired thickness.

Serve the sliced pork belly warm, ideally with your favorite dipping sauces and kimchi, similar to bossam.
