Prepare the bread: Drizzle a generous amount of extra virgin olive oil onto one side of each slice of artisan bread.

Toast the bread: Place the bread, olive oil side down, into a hot pan over medium heat. Toast until it is golden brown and crispy, about 2-3 minutes per side. Alternatively, you can toast the bread in a toaster or under a broiler.

Prepare the tomato: While the bread is toasting, take the ripe tomatoes and grate them using a box grater into a bowl. Grate until only the skin remains. Discard the skins. Season the grated tomato with salt to taste.

Prepare the garlic: Once the bread is toasted, carefully rub one side of each warm toast with a peeled garlic clove. You can use more garlic if you prefer a stronger flavor.

Assemble: Spoon a generous amount of the grated tomato mixture onto the garlic-rubbed side of each toasted bread slice. Drizzle with additional extra virgin olive oil.

Serve immediately, optionally topped with a slice of Jamón Ibérico.
