Prepare the marinade: In a medium bowl, whisk together the lime juice, olive oil, chili powder, smoked paprika, minced garlic, honey, salt, black pepper, and red pepper flakes (if using).

Add the shrimp to the marinade, tossing gently to ensure all shrimp are coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 1 hour. Do not marinate for longer than 1 hour as the lime juice can start to 'cook' the shrimp.

While the shrimp is marinating, if using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. Preheat your grill to medium-high heat (about 400-450°F).

Thread the marinated shrimp, bell pepper pieces, and red onion pieces onto the skewers, alternating them. Aim for about 4-5 shrimp per skewer, depending on their size.

Lightly oil the grill grates to prevent sticking. Place the skewers on the preheated grill.

Grill the skewers for 2-4 minutes per side, or until the shrimp turn pink and opaque and the vegetables are tender-crisp with nice grill marks. Be careful not to overcook the shrimp, as they can become rubbery.

Remove the skewers from the grill and transfer them to a serving platter. Garnish with fresh chopped cilantro and serve immediately with lime wedges.
