If your fresh rice noodles have been refrigerated, soak them briefly in warm water until softened and separated. Drain and set aside.

Stir-fry the gai lan in a little oil for a few minutes until bright green and just tender. Remove and set aside.

Add a little more oil to the pan and scramble the eggs until just cooked. Remove and set aside.

Add more oil to the pan and stir-fry the noodles for 1–2 minutes.

Add the garlic and cook until fragrant.

Pour in the sauce and toss well. Stir-fry for 2–3 minutes until the noodles absorb some of the sauce.

Add the vegetables and eggs back in and toss together for about 1 minute.

Serve immediately. Optional: top with shallot and garlic oil.
