Add the caster sugar, butter, and milk to a pan.

Melt the mixture on medium-high heat, stirring occasionally, until the sugar is dissolved. This should take about 5-7 minutes.

Once the sugar is dissolved, bring the mixture to a boil and continue to boil for 2 minutes, stirring constantly to prevent burning.

Remove the pan from the heat.

Add the peanut butter and vanilla extract to the hot mixture.

Beat the mixture with an electric whisk for 5 minutes. The mixture will become thick and lighter in color.

Add the icing sugar to the mixture.

Continue to beat with the electric whisk until the mixture is smooth and very thick.

Pour the fudge mixture into a lined tin and smooth the top evenly with a spatula.

Refrigerate for 2 hours, or until firm.

Once chilled and firm, remove the fudge from the tin, peel off the lining, and cut into squares.
