Preheat your air fryer to 190°C (375°F). Place the chicken bones in the air fryer basket and roast for 20 minutes until they develop a nice color. This step enhances the flavor and color of the broth.

While the bones are roasting, roughly chop the onions and carrots. There's no need for precision as all solids will be strained out later.

Transfer the roasted chicken bones to a large pot. Add the roughly chopped onions, carrots, unpeeled ginger, unpeeled garlic, coriander seeds, Kashmiri red chilli, green cardamom pods, cinnamon stick, bay leaves, cloves, and whole black peppercorns to the pot.

Pour 4 liters of water into the pot, ensuring all the bones and vegetables are fully submerged.

Place the pot on high heat and bring the water to a rolling boil.

Once the water boils, foam or 'scum' will rise to the surface. Use a spoon or ladle to carefully skim off and discard this foam. Continue skimming for the first few minutes, especially as the broth first comes to a boil, to ensure a clearer, cleaner-tasting broth.

After skimming, reduce the heat to low. Allow the broth to simmer gently. Avoid a vigorous boil; a slow simmer is ideal for extracting maximum flavor.

Let the broth simmer for approximately 4 hours, stirring occasionally. During this time, the broth will become deeply flavorful, aromatic, and slightly reduced.

Once the simmering is complete, carefully strain the entire contents of the pot through a fine-mesh sieve into a clean container. Discard all the bones, vegetables, and whole spices.

Your homemade chicken broth is now ready to use as a base for soups, noodles, rice, curries, or simply enjoyed warm with a pinch of salt.
