For each sandwich, crack 2 eggs into a small bowl. Add 1 tablespoon of mayonnaise and a pinch of salt. Whisk together until homogeneous.

Lightly grease a microwave-safe bowl (or a small ramekin) with cooking spray. Pour one portion of the whisked egg mixture into the greased bowl. Microwave for 45-60 seconds, or until set. Repeat for the remaining egg mixtures.

While the eggs are microwaving, heat a non-stick pan over medium-high heat. Add a few slices of mortadella (about 3 per sandwich) to the pan and sear for 1 minute.

Flip the seared mortadella. Immediately top with 1 slice of American cheese. Continue to sear for another 1 minute, or until the cheese is melted and the mortadella is slightly crispy. Remove from the pan and set aside. Repeat for the remaining mortadella and cheese.

Using the mortadella fat remaining in the pan, toast the split brioche buns for about 30-45 seconds per side, or until golden brown. Repeat for all buns.

To assemble each sandwich: Place the bottom half of a toasted bun on a surface. Layer the mortadella with melted cheese on top of the bun. Place a microwaved omelet on top of the cheese. Add the top half of the toasted bun.
