Chop the 3 cucumbers into rounds. Place the chopped cucumbers on a clean kitchen towel or paper towels and pat them dry to remove excess moisture.

In a small bowl or measuring cup, combine all the sauce ingredients: 1/4 cup crunchy peanut butter, 1 tablespoon rice vinegar, the juice from 1 lime, 1 tablespoon soy sauce, 2 teaspoons sesame oil, 2 teaspoons chili crisp oil, and 2 teaspoons honey.
