Slice the steak (filet, ribeye, or sirloin) into 1 1/2 inch cubes.

Add the cut beef cubes to a bowl for marinating.

To the beef, add 1 tablespoon oyster sauce, 2 tablespoons brown sugar, 1 tablespoon soy sauce, 1 tablespoon fish sauce, 1/2 teaspoon freshly ground black pepper, 5 grated cloves of garlic, 1/4 teaspoon baking soda, and 2 teaspoons sesame oil.

Mix all the ingredients thoroughly with the beef using a gloved hand.

Cover the bowl with plastic wrap and marinate the beef for at least 30 minutes.

While the beef marinates, prepare the yellow onion by cutting it into 2 inch petals. Also, slice cucumbers and tomatoes for garnish.

Light up an outdoor wok station (or a large wok on high heat) by turning the knob to high and pressing the "START" button (if applicable).

Add neutral oil to the wok and heat it until smoking.

Add the marinated beef to the hot wok in a single layer, working in batches if necessary to avoid overcrowding. Allow the beef to cook for about 30 seconds to develop a nice sear.

Remove the seared beef from the wok and set it aside.

Add more neutral oil to the wok, if needed.

Add the yellow onion petals to the wok and stir-fry them until they are charred and slightly softened.

Return the seared beef to the wok with the charred onions.

Toss the beef and onions together in the wok for another 30 seconds to heat through.

Plate the Shaking Beef (Bo Luc Lac) on a serving dish, garnished with sliced tomatoes and cucumbers. Serve immediately.
