Heat 125 ml of extra virgin olive oil in a pan over medium heat.

Add the chopped rosemary leaves (from 3 sprigs), 3 teaspoons of dried thyme, and 1 teaspoon of ground fennel seeds to the pan. Sauté for 1-2 minutes until the herbs are fragrant.

Add 200 g of breadcrumbs (preferably panko) to the pan. Sauté for 8-10 minutes, stirring often, until golden brown. If the breadcrumbs start to brown too quickly, remove the pan from the heat and continue stirring; they will continue to brown with the residual heat. Only return the pan to the heat if it cools down significantly.

Once the breadcrumbs are golden, remove the pan from the heat and allow them to cool completely. This cooling process can take approximately 20 minutes.

Mix 2 teaspoons of sea salt flakes through the cooled breadcrumbs.

Transfer the pangrattato to an airtight container. Ensure the breadcrumbs are completely cold before sealing the container to prevent them from sweating and becoming soggy.
