Prepare the pork by slicing it into thin strips. In a bowl, combine the sliced pork with 1 teaspoon salt, 1 teaspoon sugar, 1 tablespoon light soy sauce, 1 tablespoon dark soy sauce, 1 tablespoon oyster sauce, 1 tablespoon cooking wine, 1 tablespoon cornstarch, and 1 tablespoon water. Mix thoroughly until the pork is well coated.

Prepare the garlic scapes by trimming off their ends and cutting them into approximately 2-inch long pieces. Peel and slice the 3 cloves of garlic.

Heat 1/2 tablespoon of oil in a wok over high heat. Add the marinated pork to the hot wok and stir-fry until the pork changes color and is lightly browned. Remove the cooked pork from the wok and set it aside.

Add the sliced garlic to the wok and stir-fry until fragrant. Then, add the cut garlic scapes to the wok and continue to stir-fry until they begin to soften.

Return the previously stir-fried pork to the wok with the garlic scapes. Add 1 teaspoon salt, 1 tablespoon light soy sauce, 1 tablespoon dark soy sauce, 1 tablespoon oyster sauce, 1 tablespoon cooking wine, 1 tablespoon cornstarch, and 1 tablespoon water directly into the wok.

Stir-fry all the ingredients together until they are well combined and the sauce has thickened to your desired consistency.

Transfer the stir-fried garlic scapes with meat to a serving dish and enjoy.
