Place the dry red chillies in a small bowl and cover them with hot water. Let them soak for at least 5 minutes to soften.

Steam or microwave the broccoli florets for about 1 minute until they are just slightly tender-crisp. Be careful not to overcook them, as they will be baked later. If steaming, use a steamer basket over boiling water. If microwaving, place broccoli in a microwave-safe bowl with 1/4 cup water, cover, and microwave on high.

In a blender or food processor, combine the paneer cubes, soaked red chillies (drained), garlic cloves, curd, cumin powder, salt, and black pepper. Blend until a smooth, creamy sauce forms. If the sauce is too thick, add extra curd, 1 tablespoon at a time, until you reach your desired consistency.

In a large bowl, pour the prepared high-protein sauce over the steamed broccoli florets. Toss gently to ensure all the broccoli is well coated with the sauce.

Transfer the coated broccoli to the prepared baking tray, spreading it out in a single layer.

Bake in the preheated oven for about 10 minutes, or until the broccoli is tender and slightly crispy, and the sauce has set.

Remove the roasted broccoli from the oven. Top with a drizzle of any remaining sauce and sprinkle generously with pumpkin seeds.

Serve warm, with any extra sauce on the side as a dip.
