Gently poach the raw prawns: Bring a pot of water to a boil. Once boiling, add the prawns, turn off the heat, and let them poach for 8-10 minutes.

While the prawns are poaching, prepare the sauce. In a measuring jug or small bowl, combine the honey and hot water. Mix well to melt the honey.

Add the lime juice, crushed garlic, finely sliced long red chilli, finely chopped coriander, fish sauce, and a pinch of salt to the honey mixture. Mix everything well until combined.

Once poached, drain the prawns. Peel and devein the prawns, then place them into a clear mixing bowl.

Prepare the cucumber by halving it lengthwise, then finely slicing it. Place the sliced cucumber into the bowl with the prawns.

Prepare the mango by peeling it. Finely slice one cheek and dice the other cheek. Add the sliced and diced mango to the bowl with the prawns and cucumber.

Pour 1/2 of the prepared dressing over the prawns, mango, and cucumber in the mixing bowl.

Roughly tear 1/4 bunch of mint leaves and 1/4 bunch of coriander. Add these herbs to the prawn, mango, and cucumber mixture.

Gently mix all the ingredients in the bowl to combine them with the dressing.

Arrange the cos lettuce pieces onto a serving platter.

Scatter the prawn, mango, cucumber, and herb mix over the cos lettuce on the platter.

Garnish with any remaining fresh herbs (mint and coriander) and drizzle with as much of the remaining dressing as desired. If using, add sliced avocado.

Serve immediately and enjoy.
