Prepare the pork belly by slicing it into 1-inch pieces.

Peel the potatoes and cut them into 1-inch wedges.

Mince the ginger and garlic. Chop the green onions and set aside for garnish.

In a large pot, bring enough water to a boil to cover the pork belly. Add the sliced pork belly and blanch for 3 minutes. Drain the blanched pork belly and set aside.

Heat 1 tablespoon of vegetable oil in a large wok or Dutch oven over medium-high heat.

Add the drained pork belly to the hot wok. Stir-fry the pork belly until it turns golden brown and some of the fat has rendered, about 5-7 minutes.

Add the minced ginger and garlic to the wok with the pork belly. Stir-fry for 1 minute until fragrant.

Pour in the cooking wine, light soy sauce, dark soy sauce, oyster sauce, granulated sugar, salt, and black pepper. Stir well to combine all the seasonings with the pork.

Add the potato wedges to the wok. Stir to coat the potatoes evenly with the pork and sauce mixture.

Add enough water to completely cover all the ingredients in the wok (approximately 4 cups). Bring the mixture to a boil.

Once boiling, reduce the heat to low, cover the wok, and simmer for 20 minutes, or until the pork is tender and the potatoes are cooked through.

Stir in the chopped green onions just before serving.

Serve hot and enjoy!
