Add the 14.5 ounce can of diced tomatoes (undrained) to the bowl of a food processor.

Add the 1 can of Rotel (undrained, original flavor or your preferred variety) to the food processor.

Add the roughly chopped fresh cilantro and the roughly chopped 1/4 onion to the food processor.

Add the jalapeño to the food processor. For a milder salsa, remove the seeds and membranes. For a spicier salsa, leave some or all of the seeds in, or add an additional jalapeño.

Squeeze the juice of 1 lime directly into the food processor. Add 1/2 teaspoon of salt, or more to taste. If desired, add 1/2 teaspoon of jarred minced garlic for extra flavor.

Secure the lid on the food processor. Pulse the ingredients until they are combined to your desired consistency. For a chunkier salsa, pulse fewer times; for a smoother salsa, process longer. Taste and adjust seasoning as needed.
