Preheat the oven to 180°C (350°F).

Grease or line a 20 cm cake tin.

Peel, halve, and core the apples. Score each apple half without cutting all the way through. Quarter the apple halves if needed to fit your tin, then toss them with the juice of 1 lemon to prevent browning.

In a mixing bowl, cream the softened butter and caster sugar together until the mixture is light and fluffy.

Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Then, add the vanilla essence and mix well.

Gently fold through the flour, baking powder, and a pinch of salt into the wet ingredients. Be careful not to overmix the batter; mix just until combined.

Spread the batter evenly into the prepared 20 cm cake tin.

Arrange the lemon-tossed apples on top of the batter. There is no need to press the apples in, as the cake will rise around them as it bakes, creating the 'sunken' effect.
